Vegetables of the Day — Stir-Fry!
The first day we had enough okra for a meal, I created a stir-fry from available fresh vegetables:
- okra (leave them un-cut and the mixture won’t become slimy)
- onions (harvested earlier)
- tomatoes (cut in half — had to do something with those volunteer cherry tomatoes in the bowl!)
Cut vegetables, place in skillet, add a teaspoon or so of olive oil and heat. Add water to prevent burning the mixture as the vegetables soften. Salt and Pepper to taste, then Enjoy!
