Vegetables of the Day — Stir-Fry!

Vegetables in the stir-fry were cherry tomatoes, onions, and whole okra.

Stir-Fry, June 23, 2014

The first day we had enough okra for a meal, I created a stir-fry from available fresh vegetables:

  • okra (leave them un-cut and the mixture won’t become slimy)
  • onions (harvested earlier)
  • tomatoes (cut in half — had to do something with those volunteer cherry tomatoes in the bowl!)

Cut vegetables, place in skillet, add a teaspoon or so of olive oil and heat. Add water to prevent burning the mixture as the vegetables soften. Salt and Pepper to taste, then Enjoy!
