Zucchini Brownies

My sister sent this to me after she visited and saw how many zucchini squash were adding up in our garden and kitchen!

1 1/2 cup sugar                2 cups grated, unpeeled zucchini
1/2 c. vegetable oil           1/2 cup chopped nuts
2 eggs                         Frosting or powedered sugar, optional
2 tsp. Vanilla
2 cups all purpose flour
1 1/2 tsp. baking soda
1/2 c. unsweetened cocoa

LIGHT VERSION

reduce sugar to 1 cup
eliminate oil and add 1 cup applesauce
substitute 2 to 4 egg whites for the 2 whole eggs.

Review:
We made the Light Version. The texture was more like a cake than like brownie, but overall it was pretty good. We're trying to think of how to modify the recipe to get more of a brownie texture.
