Spaghetti Squash Harvest, Nov 21, 2015

With the unusual weather (Spring Floods, Summer drought, Fall Floods), it’s been pretty tough to get anything from the garden. We planted Summer veggies in the Spring (most of them drowned so we replanted in August, hoping for a late Frost), then planted Fall veggies in late August and kept them both watered and weeded. Unfortunately, the lack of vegetation elsewhere brought the deer in by the droves! By that point, we abandoned ship and decided not to tend, water, or weed the garden.

Interestingly, we discovered that deer do NOT like spaghetti squash. So, we have a bountiful harvest of one of my favorites! This remarkable vegetable can be easily substituted for pasta — just check my recipe here. So, all is not completely lost in the garden this year … we got quite a surprise from the Spaghetti Squash Harvest! (With a frost eminent tonight, we decided to pick whatever was large enough to cook and eat!)
