Sweet and Salty Brunch Treat

This sweet potato and Canadian bacon treat is a complete meal!

1 to 1 1/2 sweet potatoes (depending on size).

1/2 onion, chopped.

1 Tablespoon Olive Oil.

1/2 pound Lean Canadian Bacon, Diced.

Sat and Pepper to taste.

Peel and dice the sweet potatoes.

Chop Onion.

Place 1 Tablespoon Olive Oil in the skillet, add sweet potatoes and onions and cook on medium heat.

Add 1 or 2 tablespoons of water to prevent scorching the mixture.

Dice the Canadian Bacon.

If uncooked Canadian Bacon is used, cook in a separate pan, until done. If the Canadian Bacon is cooked, add it to the sweet potatoes and cook them together.

Cover and Cook until just done. Cook a couple minutes longer to blend flavors.

Salt and Pepper to Taste.

Serves 2 to 4. (Mixture makes 4 to 5 cups.)

ALTERNATE RECIPE:

Replace the Canadian Bacon with whole eggs, or egg whites.
